This book surprised me in its range。 It is full of far more than just Indian recipes, but each of them sound really good in their own ways。 The recipes are specific (even giving the measurement of vegetables in grams when needed to ensure that you have a proper sense of what it is calling for)。 They also have fairly accessible ingredients too in that it doesn’t seem like I’d need to go to a million specialty stores in order to find things。 The recipes are also pretty simple all things considered This book surprised me in its range。 It is full of far more than just Indian recipes, but each of them sound really good in their own ways。 The recipes are specific (even giving the measurement of vegetables in grams when needed to ensure that you have a proper sense of what it is calling for)。 They also have fairly accessible ingredients too in that it doesn’t seem like I’d need to go to a million specialty stores in order to find things。 The recipes are also pretty simple all things considered, and so a great job of utilizing the instant pot wherever possible。 Finally, and somewhat best of all, nearly every recipe has a picture, which is just incredibly helpful in giving me an idea of what I would be aiming to make。 Altogether then, this vegan recipe book is a very good one that definitely offers a lot。 For anyone who likes vegan cooking, instant pots, Indian, or even just some quicker recipes, I would say this book is a great choice。Special thanks to the publishers and netgalley for an online copy of this book in exchange for an honest review。 。。。more

I love Vegan Richa。 I have followed her recipes for a while now, and they are all super yummy。 I was beyond excited to check out this new instant pot cookbook。 The recipes are all pretty simple especially since they are instant pot recipes。 The photos are gorgeous, which is always a big thing for me in cookbooks。 I really liked how there were some "beyond" recipes that branch outside the Indian food we normally see from Richa。 I think it will open doors for some people who want to experiment wit I love Vegan Richa。 I have followed her recipes for a while now, and they are all super yummy。 I was beyond excited to check out this new instant pot cookbook。 The recipes are all pretty simple especially since they are instant pot recipes。 The photos are gorgeous, which is always a big thing for me in cookbooks。 I really liked how there were some "beyond" recipes that branch outside the Indian food we normally see from Richa。 I think it will open doors for some people who want to experiment with Indian food, but also like to have some other recipes on hand as well。 The desserts look flipping amazing。 The only thing I would say is I do wished it was hardcover, and that is only because the book is pretty decent in size and paperbacks cookbooks that get a lot of love can split in the spine。 Besides that Nom! Loved this recipe book, it is definitely something we are going to again and again。 Makes delicious meals that everyone in our family can enjoy。 Having been an instantpot user now for a few years this book could not have been better received。 Our family loves the fresh takes on classics with a vegan diet, the recipes are easy to follow and ingredients are not crazy to procure。 We really recommend adding this to any kitchen cookbook collection。

I helped recipe test this book。 I was not paid and all opinions here are my own。 I love that this book has flavorful healthy whole-food meals that are both simple and complex all while being easy。 There are flavors from many cultures, but Indian dominates。 It is very well tested so the timings are just right。 No gross limp vegetables or burning or sticking。 Just crisp cauliflower and al dente pasta and fluffy cakes。 So many pressure cooker recipes end up being kind of flat, but these recipes bui I helped recipe test this book。 I was not paid and all opinions here are my own。 I love that this book has flavorful healthy whole-food meals that are both simple and complex all while being easy。 There are flavors from many cultures, but Indian dominates。 It is very well tested so the timings are just right。 No gross limp vegetables or burning or sticking。 Just crisp cauliflower and al dente pasta and fluffy cakes。 So many pressure cooker recipes end up being kind of flat, but these recipes build flavor by a sauteing step to develop caramelization or spice flavors, then finish with a squeeze of lemon, drizzle of hot spiced oil, or fresh herbs so you are getting something that is complex in flavors without being complex to make。 And there are lots of dump-and-done recipes too。 It has a lot of pot-in-pot recipes so you can make multiple things at once, like lentils and cabbage or beans and rice。 It also has a whole chapter on staples like chickpea flour (shan) "tofu" that you can use in any other recipe。 There are swaps and substitutions for various diets like oil free, gluten free, soy free, etc。 It does not rely on "fake meat" products like so many vegan recipes, but if you want to use them there are hints on how to do so。 Likewise if you don't have all the spices and ingredients, there are many listed as optional so you can still get a delicious dish without a trip to the Indian market or restocking your pantry。 I tested this during covid lockdown when it was very hard to get even simple ingredients and I still managed to make great food。 Some of my favorites are mushroom barbacoa tacos, mac & cheese, eggy sandwiches, Spanish rice, chai tea (by the gallon if you want!), and a bunch of recipes that taste better than a restaurant like korma and saag。 Perfect gift for anyone new to or experienced with pressure cooking, vegetarians/vegans, or any meat-eater looking to add more vegetables and whole foods to their diet! 。。。more

I received an Advanced Read Copy of this book from NetGalley in exchange for an honest opinion。For vegans or vegan adjacent, this is an extensive how-to cookbook for Instant Pot cooking。 All recipes have easy to follow instructions and most ingredients are easy to find or have suggested substitutes。 I especially like that many recipes have multiple variations that work just as well。Highly recommended。4。5

You won't be disappointed to add this to your collection and bring her meals to your instant pot。 This book has her warm spice blends lending to full-depth delicious flavors, lots of details so you won’t need to question a recipe, substitutions to help those with allergies, food aversions, and those just looking to stay away from certain foods, and it also includes new ways for you to learn to use your Instant Pot for all your meals throughout the day。 If this is your first Vegan Richa book, I would say like most of her books a good portion of this book is Indian cuisine, probably around half。 But this one also visits other areas of cuisine hitting here and there around the globe to bring so many delicious cuisines to your instant pot。 These recipes visit countries like Japan, Jamaica, Morocco, Africa, as well as others。 For those that want some familiar western cuisine it's in this cookbook too!Some hits and misses -It contains a great section to compare the models of different instant pots/ pressure cookers so you can find what best fits your needs。 -A Q/A section in case you run into issues or are new to instant pot/ pressure cooking。 -A basic guide to cooking grains, beans, etc。 Plus a section of substitutions for common ingredients throughout the book。 -A list for your pantry needs。-Information about ingredients, like spices, that may be new to you。 One thing I feel it's missing is a chart of flavor profiles for those ingredients that may be new to some people。 Like fenugreek which isn't easily substituted because of the bitter notes it adds to the meal。 -Some ingredients you may purchase just for this book are utilized much more than others。 Some may only be used once in the whole book。 With the majority of the recipes being Indian cuisine, it puts one recipe from another country at the end of the list for purchasing extra uncommon ingredients。 -There's prep and other appliances involved in many of these recipes。 Which may throw the normal “Instant Pot Cookbook buyer” off。 But the use of these appliances are normally quick and minimal。 But when it's as easy as throwing all ingredients of a sauce, Bhuna Masala Sauce, into a blender and then pouring it into the instant pot I think quick prep like that makes these meals much more accessible for the everyday cook。- I like how this book starts with the basics of giving you recipes for many things you will use/ incorporate throughout the book in many of its recipes。 As well as showing you how easy it is to make these “ingredients” that you can use in your own dishes。 Stock, Cashew cream sauce, Spice blends, etc。-I appreciate the detailed lists of ingredients and substitutions provided。 However, underlining the main ingredient initially called for would help ease navigation and viewing while you're collecting said ingredients。 -I personally love cookbooks that include grams/ml in their main ingredients lists to help those not as comfortable in the kitchen and more specifically in baking where accuracy matters more。 -I love that if you don't have a specific spice blend on hand or can't find that particular blend in store, you can use the recipe provided in this book for that blend。 Making access greater in areas where supplies might be more limited。-Storage instructions such as “freezing” makes this book great for preparing and making parts or whole dishes ahead of time。-This book is also very much wholefoods based like described。 It includes a lot of beans, legumes, nuts, mushrooms, soy, & spices。 Most recipes revolve around those main staples and spice blends。-It comes with many substitutions, variations, ideas, tips, and tricks of how to switch up the ingredients to make them work better for you and to ease your experience if something needs tweaking。Overall I think this book is full of flavorful, well thought out, and detailed recipes!If you like to visit world cuisine and easily prepare it in your home this is def the book for youAbove was my first look at the book… before starting to test out the recipes。 This is where some of my views written above started to change。 So my last thoughts on the book and some recap。These recipes go together so quickly! Once you have measured out the spices and have your ingredients together it's more “throw and go” than I initially thought。 My initial negative thoughts of other appliances outside of the instant pot being needed really hasn't been an issue and has been minimal。 I have also loved the extra instructions for keeping and freezing the recipes。 I have loved throwing them into the freezer and having it on “those days ”when you don't want to cook and you just want something even quicker than quick。 You have your own prepped, healthy, whole foods waiting on you to “dump and go” or have your significant other, who doesn't know how to use the instant pot, throw together a wholesome healthy meal for the family because it really is that simple。 The more I cooked from this book the more I wanted to try and now we have tried over half the book。 I also feel trying recipes from the book is very important when reviewing and seeing how the book and recipes function, come together, and over all see how the family likes them。Plus I learned new ways to use my instant pot。 Like the “ steam” feature for baking。 Who knew? It is much more extensive than the average cook book(150 recipes!)。 Even though they are all instant pot recipes, I love that Richa gives us recipes with a variety of recipe levels。 There are several "dump and done" recipes for when you are in a time crunch。 There are also more time consuming(but worth every second!) recipes that use the instant pot for part of the recipe, but use other pots/pans too。 The variet I love Vegan Richa's recipe website, so I was excited to check out her new cookbook! It is much more extensive than the average cook book(150 recipes!)。 Even though they are all instant pot recipes, I love that Richa gives us recipes with a variety of recipe levels。 There are several "dump and done" recipes for when you are in a time crunch。 There are also more time consuming(but worth every second!) recipes that use the instant pot for part of the recipe, but use other pots/pans too。 The variety of meals is also amazing。 The majority of the recipes are Indian cuisine, but there are other cuisines featured too。 The biggest surprise for me was the variety within the extensive Indian recipes。 There was both northern and southern Indian cuisine, street food, spice mixes, condiments, spice mixes and more! Typically Indian Cookbooks in the US only feature the staples you see in restaurants here(tikka masala, korma, daal, etc)。 This book had quite a few recipes that I have never heard of, but can't wait to try them all! Last but not lease, I appreciate that Richa took the time to cover instant pot models and other tips and tricks, as well as the pantry staples needed to make the recipes within the book。 While most people will skip straight to the recipes, I found the information helpful in making sure I got the most out of them。 I definitely recommend reading through that section before trying any of the recipes。Thank you to NetGalley, the author, and the publisher for providing me with an ARC in exchange for my honest review。 。。。more

I enjoy Richa’s other two cookbooks, so when this one came up I was excited to check it out。 And it does not disappoint! One thing I like about all her recipes is they include ways to adapt to be free of gluten, nuts, soy, etc。 And something this IP cookbook includes that I haven’t seen before is pot-in-pot cooking (having something on a trivet to steam above a sauce, or adding another bowl inside the IP)。 I’d estimate at least half of the recipes are Indian specialties, so be aware these aren’t I enjoy Richa’s other two cookbooks, so when this one came up I was excited to check it out。 And it does not disappoint! One thing I like about all her recipes is they include ways to adapt to be free of gluten, nuts, soy, etc。 And something this IP cookbook includes that I haven’t seen before is pot-in-pot cooking (having something on a trivet to steam above a sauce, or adding another bowl inside the IP)。 I’d estimate at least half of the recipes are Indian specialties, so be aware these aren’t 5 ingredient recipes—there’s a lot of layering of flavors。 With plenty of tasty sounding recipes I’m especially looking forward to trying the Sweet & Sour Chickpeas。 Thank you to NetGalley & Hachette Books for this advanced reader copy。 All opinions expressed in this review are my own。 。。。more

Thank you to NetGalley and Hachette Go for providing me with an ARC of this book in exchange for an honest opinion。As someone who loves using my Instant Pot to cook, plant-based recipes, and trying new types of cuisine, it's like this book was specially created for someone like me。 I loved the fact that it offered variations for people who need to avoid certain ingredients, such as gluten, garlic, onion, and nuts。 There were so many recipes that I bookmarked so that I can try them, and while the Thank you to NetGalley and Hachette Go for providing me with an ARC of this book in exchange for an honest opinion。As someone who loves using my Instant Pot to cook, plant-based recipes, and trying new types of cuisine, it's like this book was specially created for someone like me。 I loved the fact that it offered variations for people who need to avoid certain ingredients, such as gluten, garlic, onion, and nuts。 There were so many recipes that I bookmarked so that I can try them, and while there is a heavy emphasis on Indian dishes, there are recipes from other cuisines as well, including Italian, African, and American。 I loved the idea of incorporating new foods and using familiar foods and spices in a different way。 The photos of the recipes are stunning。 I especially appreciated that she included some photos of the recipes in progress。 This book got me to think outside the box about using my instant pot, such as creating desserts in it。 I loved the fact that there were so many healthy recipes, and the instructions are incredibly easy to follow。 My only issue with this book is that some of the recipes use a lot of ingredients, but even those seem incredible and tasty。 Many of the ingredients are easily found at my local supermarket, with only a few that I'd have to go to a specialty store to get。 This book is an incredible collection of easy-to-create and tasty-looking recipes。 I can't wait to try some of them out! 。。。more

I love my Instant Pot!
